Delicious Quick Dinners

Get dinner on the table in 30 minutes with these three delicious quick dinners.

ONE POT, CREAMY PESTO PASTA

Prep 10mins, Cook 20mins, Serves 4

INGREDIENTS
1/4 cup extra virgin olive oil
500g chicken breast stir-fry strips
2 small zucchini, thinly sliced into rounds
2 cloves garlic, crushed
325g Woolworths spaghetti, halved
1 bunch basil, leaves picked
1/3 cup pistachio kernels
1 small lemon, juiced
2/3 cup light thickened cooking cream
1 cup frozen peas

METHOD

Step 1 of 4   Heat 1 tbs oil in a large, deep frying pan over medium-high heat. Cook chicken and zucchini, stirring, for 3 minutes or until chicken is golden. Remove from pan and set aside.

Step 2 of 4   Add garlic to pan and cook for 30 seconds or until fragrant. Add 3 cups water and spaghetti and bring to the boil. Reduce heat to low. Simmer, uncovered, for 10 minutes or until pasta is almost tender and water has almost evaporated.

Step 3 of 4   Meanwhile, reserve cup small basil leaves. Place pistachio and remaining basil in a small food processor. Process until finely chopped. Add lemon juice and remaining oil. Process until well combined. Season.

Step 4 of 4   Add cream, chicken mixture and peas to pan and cook for 1 minute or until heated through. Season. Stir in pesto. Serve pasta topped with reserved basil.

BAKED MUSHROOM PASTA

Prep 10mins, Cook 25mins, Serves 4

INGREDIENTS
400g cup mushrooms, sliced
200g smooth feta
1/4 cup extra virgin olive oil
4 cloves garlic, finely chopped
1 tbs thyme leaves
300g rigatoni
1/2 cup continental parsley, roughly chopped

METHOD

Step 1 of 4   Preheat oven to 200°C/180°C fan-forced.

Step 2 of 4   Place mushroom on a large, shallow baking tray with sides. Place feta in centre of tray. Drizzle with oil, then sprinkle with garlic and thyme. Season. Bake for 25 minutes or until feta starts to brown.

Step 3 of 4   Meanwhile, cook pasta according to packet instructions. Drain. Remove tray from oven. Using a fork, crush feta and stir into mushroom mixture. Add pasta to tray and toss to combine. Scatter over extra parsley to serve.

CLASSIC MEATBALLS

Cook 20mins, Serves 6

INGREDIENTS
500g tomato pasta sauce
1/4 cup milk
1/2 cup continental parsley, finely chopped
1/2 cup parmesan, finely grated (plus extra to serve)
3 cup spaghetti , cooked
500g beef mince
1/4 cup extra virgin olive oil
1 large free range egg, lightly beaten
1 garlic clove, crushed
1/2 cup fine fresh breadcrumbs
10 basil leaves, to garnish

METHOD

Step 1 of 4   Place breadcrumbs in a small bowl and pour over milk. Set aside.

Step 2 of 4   Place mince in a large bowl. Add egg, parmesan, parsley and garlic, and season. Add breadcrumb mixture, then mix well to combine. Roll tablespoons of mixture into balls. Place on a large plate.

Step 3 of 4   Heat oil in a large frying pan over medium-high heat. Cook meatballs, turning, for 5 minutes or until browned. Add pasta sauce to pan and stir to combine. Reduce heat to medium-low, then simmer, covered, for 15 minutes or until meatballs are cooked through.

Step 4 of 4  Toss meatball mixture through spaghetti, and serve topped with basil leaves and extra parmesan.
